Quiet Thursday with Renee

I spent my day sitting and visiting with Renee today while Tony (son-in-law) had surgery.  He did real good and will be coming home tomorrow.  The hospital was so full they had to put him in a holding unit until about 6:30 tonight when a bed came available.
Renee and I took our laptops and we sat and looked at several of the blogs I follow and also looked up the value of some 1/2 pint canning jars Renee has.  OMG these Ball jars are worth $30 each and she has some paint in one.   I'm sure I have some jars that are worth more than the food that is in them.  Canning season is just about done for this year.  I will be canning some vegetable soup mix this weekend and next week I will be canning some chili beans.  After canning is completely done I have plenty of other things on my list.  One of the things I need to do is to make some noodles and also some spaghetti.  I dry them after they are made and then freeze them for whenever needed.  Then I need to make and freeze some pie crusts to have ready for the holidays and whenever we want a nice treat.  
Tomorrow is "Amish" day so it's off to bed for me.  Later, take care.

  3. I am so glad the surgery went well and you had a chance to "relax." This may sound selfish but I want to thank you for inspiring me to can even more. I can a lot compared to others in my area, but you have inspired me to do more. I am cleaning out my freezers and have purchased 120 pounds of beans to put up as soup, chili a just beans. I do have one request, though, but I understand if you do not have the time. You talk about canning chili beans and such but do not put the spices down. Most of your recipes I can follow just by reading, but some do not have details. In the next few weeks I will be putting up beans and want to include chili beans. Do you think you might be able to publish your recipe? Thank you very much, DeeKnitter fm KS

    1. You are so kind and it brought tears to my eyes to read your comment. I am more than happy to share the recipe and if you want any others just ask.

      Chili Beans yield 4 qts

      2 #'s of pinto or kidney beans (or use a mixture of both)
      Soak the beans overnight in cold water.
      Drain liquid. In large pot add the following:
      2 qts (8 cups) tomato juice
      1 cup chopped onions
      6 TBSP chili powder
      2 TBSP salt
      1/4 tsp blk pepper
      Bring this mixture to a boil and then add the drained beans. Bring this back to a boil and boil 5 minutes. Put the hot beans in hot canning jars leaving 2 inches. Add liquid and leave 1/2" head space. Process in pressure canner qts 10 lbs for 90 minutes. You can adjust the spices as per your own taste.
      When I get ready to make chili I will brown 1 lb of ground beef, drain, add 1 qt chili beans and 1 qt of tomatoes. I will then simmer this mixture for about 30 minutes.
