Canned My First Jars of Meat Today

OK bring on the beef, pork, chicken and turkey I am hooked, I canned my first jars of just meat today.  I've put ham in beans but that it is. I was up at 5 this morning so I got an early start.  I canned 3 pts of turkey pieces, 19 pts of shredded chicken and 2 pints of chunks of ham that was leftover from yesterdays lunch.  My mind has been thinking of all the possibilities to use the stuff I canned; chicken and noodles, chicken noodle soup, chicken vegetable soup, shredded BBQ chicken, turkey noodle soup, creamed turkey over biscuits, scalloped potatoes and ham, quiche with ham.  Canning more meat will have to wait for a couple of months.
Tomorrow I will be canning dry beans flavored so I can use them for white chicken chili.  This will be the last canning I do until after I recover from my hand surgery next week.
For supper tonight we had quiche and used a frozen pie crust I made last week, eggs from the girls, cream from the raw milk we got this weekend at the Amish dairy, homemade cheese, left over ham from yesterday, dehydrated onions, peppers and mushrooms.  A delicious meal using items I had put up.

  1. I canned 20 pounds of chicken today. Then while I was in the mood I canned 18 pints of potato slices.

  2. I love to have canned potatoes on hand. Last month I was able to get 50 lbs of red potatoes real cheap and canned all of them. Canning can be addictive.

  3. good for YOU! I've been canning almost 50 years and have never canned meat. I've cured hams and have freezers full but have never canned meat.

  4. I've canned beef, wild turkey, and venison. I love being able to grab a jar of canned meat and just make dinner without having to cook it first--makes for a quick meal. In fact, I'm using a jar of venison to make vegetable-beef soup for tonight's supper.

  5. Hi Paula! That's fantastic! I canned my first meat (chicken breasts) a couple of weeks ago and everyone says it makes the best chicken salad they've ever eaten! I too, love to can! Thanks for sharing! Blessings from Bama!

  6. That sounds great! I have canned chicken soup before with meat, but not meat by itself. Makes me wish I had some on the shelves after I bought some canned chicken at the store to prepare for any power outages from this storm...great to have on hand! Great post!   7. We had our first jar of chicken the other night and the flavor was fantastic. I so wish I would have canned more meat but am planning on doing more the first of the year.
