If you can, please take some time and read the below post. Patrice in my opinion is a wonderful writer and she has wrote an excellent article on canning. I've heard some say "well this is what my grandmother did it" or "I have done it for years like this and have never had any problems". The USDA has a lot of research behind what it says and employs food scientists to do nothing but test recipes and safe practices. Please be safe and follow the guidelines they publish when you can.
