This week I made a wonderful pot of vegetable soup using ground turkey. I browned the turkey in a soup pan then added a jar of my mixed soup vegetables, pint of tomatoes, quart of tomato juice and 3 tablespoons of beef base. The soup had a wonderful tomato taste and was very low in fat. The turkey used was some of the turkey breasts that I ground last month. Soup is one of my favorite meals at this time of year, an easy one pan meal.
